Sweet Retreat Recipes

Several of you requested recipes from the salads served at dinner at last weekend's Sweet Retreat. These are both so easy to make, and just perfect for the spring/summer weather that is coming up! By the way, I "stole" both of them from Jody!

Chicken-Rice Salad

Ingredients:
Shredded Lettuce
1 Box of Uncle Ben's Long Grain Wild Rice
Chicken Breasts-Grilled and cut into bite-sized pieces
Grapes- cut in half
Honey Mustard Dressing (or your preference)

Grill Chicken and prepare box of rice according to directions. (I used two boxes for a larger number of portions.) Cover bottom of serving tray with a bed of lettuce. Layer with rice, then chicken. Sprinkle grapes on top. Serve with Honey Mustard Dressing. Enjoy!

Strawberry-Walnut Salad

Ingredients:
Spinach Leaves
Strawberries-sliced
Walnuts
Strawberry Vinaigrette Dressing (or Raspberry Vinaigrette)

Make bed of spinach leaves.
Layer sliced strawberries, sprinkle walnuts on top. Serve with vinaigrette dressing.
